Cook the rice and fold in the sushi vinegar while the rice is still hot, using a cutting motion to avoid breaking the grains. Transfer to a hangiri or wide wooden bowl, fan to cool to body temperature, and cover with a damp cloth. The rice is ready when it is glossy, just warm to the touch, and holds together when a small amount is pressed — it must not be cold or stiff.

Hold each full nori sheet over a low gas flame for 3–4 seconds per side, moving it continuously until the sheet stiffens slightly and the colour brightens to a deep, even green. Cut in half to produce half-sheets. The sheet should snap cleanly when bent — a pliable sheet has not been sufficiently toasted.

Arrange all toppings on trays or boards at the centre of the table: premium items (tuna, ikura), mid-range items (salmon, shrimp, avocado, cucumber, tamagoyaki, cream cheese), pickled and fermented items (takuan, nattō, gari), and aromatics (shiso, sprouts). Place condiment dishes of wasabi and soy sauce at each setting. Position the shari in its covered container alongside a rice paddle. Place a small bowl of cold water at the table for fingertip moistening.

To roll: hold a half-sheet of nori diagonally in the open palm so that one corner points toward the wrist — this angle forms the cone naturally. Place a cylinder of shari (approximately 60–70 g) along the left half of the sheet. Add a small line of wasabi directly onto the rice where the fish will rest, then lay one or two toppings across the rice, choosing for personal contrast — one rich, one crunchy, one pickled. Do not overfill: toppings should be distributed tightly rather than mounded. This is the step on which the dish lives or dies — an overloaded or pre-rolled temaki cannot close cleanly and the nori will soften before it is eaten; a properly filled cone, rolled at the table and eaten within 20–30 seconds, delivers the full mineral crispness of the nori against warm, vinegary rice.

Fold the lower-left corner of the nori up and over the rice to begin the cone, then roll the sheet into a tight cone shape. Moisten the trailing corner with a wet fingertip to seal if needed. Eat immediately — within 20–30 seconds of rolling. The nori should resist the bite with a clean, audible snap; any flex or chew signals that the rice moisture has already begun to soften the sheet.
