    Combine the rice vinegar, sugar, and salt in a small saucepan over low heat. Stir only until the sugar dissolves; do not simmer. Remove from heat. While the cooked rice is still hot, turn it into a large flat bowl (hangiri or equivalent). Pour the seasoned vinegar evenly over the surface and fold it through the rice using a wooden spatula with cutting strokes, fanning simultaneously to drive off steam. The rice is ready when it is glossy, each grain distinct, and at room temperature to the touch.

    Film a non-stick pan lightly with neutral oil and set over medium-low heat. Pour in the beaten egg to form a thin sheet. Cook without stirring until the surface is just set and no longer wet. Slide onto a board, roll loosely, and cut across into fine threads (kinshi tamago). The shreds should be bright gold and dry enough to hold their form when lifted.

    Scatter the kinshi tamago evenly across the surface of the sushi rice as a base layer. This golden ground establishes the visual foundation on which all remaining toppings will be read. The layer should cover the rice fully without compressing it.

    This is where the dish lives or dies: arrange the sliced sashimi, shrimp, lotus root rounds, snow peas, and ikura across the kinshi tamago in deliberate, non-overlapping groups so that each ingredient is fully visible. Follow Edo convention — toppings rest on the rice, they are not buried in it. Composition is judged as rigorously as flavour; obscured ingredients represent a failed chirashi.

    Lay pickled ginger at the bowl's edge. Immediately before carrying the bowl to the table, squeeze yuzu or lemon across the entire surface from a height. The volatile citrus fragrance rises at once; this is the signal that assembly is complete and service must follow without delay.
