    Cook the washed short-grain rice with the measured water. While the rice is still hot, turn it into a wide, flat-bottomed wooden tub (hangiri) or a large shallow non-reactive bowl. Dissolve the vinegar, sugar, and salt together, then pour evenly over the rice. Fold the seasoning through the rice with a flat wooden paddle using broad cutting strokes, simultaneously fanning to cool the grains quickly. The rice is ready when each grain is separate, glossy, and lightly seasoned — neither wet nor dry to the touch.

    Drain the burdock root. Bring dashi, soy sauce, mirin, and sugar to a simmer in a wide saucepan. Add the burdock and carrot. Cook over medium heat, stirring occasionally, until the liquid is almost entirely absorbed and each piece is tender yet holds its shape. Remove and set aside.

    In the same pan, combine the rehydrated shiitake with a portion of their strained soaking liquid, soy sauce, mirin, and a little sugar. Simmer until the liquid is nearly gone and the shiitake are glossy and fully seasoned. Remove and set aside.

    Simmer the lotus root slices in a small amount of dashi with rice vinegar and sugar until the slices turn translucent and still retain a firm, audible crunch. This is where the dish lives or dies: lotus root cooked past its crunch collapses into the rice and the textural contrast — the single most important structural element of Osaka chirashi — is lost. Remove, drain thoroughly, and pat dry.

    Beat the eggs with the dashi, sugar, and salt until fully combined. Heat a wide non-stick or lightly oiled pan over low heat. Pour in just enough egg to coat the base in a thin, even layer. Cook until just set on the surface with no liquid visible. Turn out onto a board, roll loosely, and slice into hair-thin strips (kinshi tamago). Repeat with the remaining egg mixture. The threads should be pale gold and fine enough to fall loosely.

    Verify that all simmered components are patted dry of excess liquid. Fold the carrot, burdock, shiitake, bamboo shoots, and lotus root into the sushi rice using the same broad cutting strokes used to season the rice. Each component should be evenly distributed through the rice with no streaking or clumping. The ratio of rice to mixed ingredients is equal by volume.

    Rest the mixed chirashizushi, loosely covered with a damp cloth, at room temperature for at least 30 minutes. The rice and seasoned components will integrate. Do not refrigerate — cold stiffens the rice irreparably. After resting, taste a small portion: the balance should be sweet-sour from the rice, sweet-savoury from the vegetables, with no single element dominant.

    Transfer the chirashizushi to a large serving dish or lacquer box. Lay the kinshi tamago threads over the surface in a loose, abundant crown. Arrange the snow peas and pickled ginger across the top for colour contrast. The finished dish should appear colourful, abundant, and composed.
