    Divide the ground chuck into four equal portions of approximately 170 g each. With minimal hand contact, form each portion into a round patty roughly 10 cm in diameter and 2 cm thick. Do not compact the meat. The surface should appear loosely textured, not smooth. Press salt and coarsely ground black pepper firmly into both exterior faces of each patty. Season the exterior only — mixing seasoning into the meat overworks it and produces a dense, meatloaf-like texture.

    Heat a cast-iron griddle or set a charcoal grill to its highest temperature. The surface must be hot enough to sear immediately on contact — a drop of water should vaporise on the griddle within one second. This is where the dish lives or dies: an insufficiently hot surface prevents the Maillard crust from forming, and the crust is the flavour of the hamburger.

    Place the patties on the hot surface. Do not press them at any point during cooking. Cook until a deep mahogany crust has formed on the underside — the patty will release from the griddle without resistance when it is ready to turn. Flip once.

    Lay one slice of American cheese on each patty immediately after turning. Cook the second side until an equivalent crust forms. The cheese should be fully melted — a creamy, enveloping blanket covering the patty surface with no unmelted edges visible.

    While the patties finish, place the buns cut-side down on the outer edge of the griddle or on a cooler part of the grill until lightly toasted and warm through. The bun should remain soft and compressible — it should yield immediately when pressed with a finger.

    Dress the buns: ketchup and mustard on the heel, then lettuce, tomato, onion, and pickle. Set the cheese-covered patty on the dressed bun, close, and serve immediately. The patty interior should be juicy — fat rendered from the 20% fat content keeps the interior moist throughout cooking.
