    Lay each cutlet flat. With a meat mallet, pound to even thickness. Score the white sinew band at the edge of the loin at 1 cm intervals — this prevents curling in the oil. The pork is ready when the surface is uniformly flat and the sinew is visibly nicked at each score.

    Set up three shallow vessels in sequence: plain flour, beaten egg wash, and panko. Dust each cutlet in flour on both sides, shaking off all excess — a thin, dry film only. Pass through the egg wash, allowing surplus to drip away. Lay into the panko and press gently so the crumbs adhere in an even, uncompressed layer across the entire surface. This is where the dish lives or dies: the flour must be dry enough to bond the egg, and the egg must be wet enough to anchor the panko — any gap in the sequence and the crust will separate in the oil. The finished cutlet looks fully and evenly crumbed, with no bare patches.

    Heat the oil in a deep, heavy vessel to 170 °C. Lower one or two cutlets at a time — do not crowd. Fry for approximately 5 minutes, turning once, without pressing the cutlets against the vessel base. The crust is ready when it is a deep, even golden brown and the surface sounds hollow and crisp when tapped lightly.

    For maximum crispness, apply the double-fry: remove the cutlets at 90 per cent done — exterior pale gold, interior still slightly under — and rest on a wire rack for 3 minutes. Raise the oil to 185 °C and return the cutlets for 30–45 seconds until the crust deepens to rich amber. The interior temperature at this point should reach 65 °C. Lift and drain on a wire rack, never paper, to preserve the open panko structure.

    Rest the fried cutlets on the rack for 3 minutes. Slice each cutlet with a sharp knife in a single pressing motion — no sawing, which fractures the crust. The cut face should show a moist, barely-pink interior encased in an intact, audibly crisp shell.

    Arrange the sliced cutlet beside a mound of finely shredded raw cabbage. Spoon tonkatsu sauce over or alongside, and place a small amount of karashi mustard on the plate.
