    Blanch the pork bones in boiling water for 5 minutes, drain, and rinse under cold water to remove blood and impurities. Place the cleaned bones in a large pot with 2 litres of fresh water and bring to a vigorous rolling boil. Maintain this aggressive boil throughout the extraction — do not reduce to a simmer. The broth is ready when it has turned opaque and milky white, with a viscous, collagen-rich body that coats the back of a spoon.

    Prepare the chicken-dashi layer separately: combine clear chicken stock and strained dashi in equal volumes (500 ml each) and heat gently to just below a simmer. Keep this layer clear — it must not cloud. Clarity is confirmed visually; the layer should remain transparent when held to light.

    Prepare the shoyu tare by combining soy sauce and mirin; warm briefly to integrate. Keep the tare entirely separate from both broths. This separation is the structural principle of the hybrid — the tare is added individually to each bowl at service, never combined into the pot. The balance of tare to broth is where the dish lives or dies: the finished bowl should read light brown, not black — reduce the shoyu tare quantity if the color darkens beyond a warm amber.

    Blend the mayu and rendered chicken fat in equal parts to produce the compound aroma oil. This two-component oil introduces both the bitter char of blackened garlic and the round, fatty depth of chicken fat — neither alone achieves the layered aromatic profile required of the hybrid style. Set aside at room temperature.

    Cook the medium-wavy noodles according to their specification. Drain well. The noodles should offer slight resistance at the centre — not soft throughout.

    For W-soup assembly: ladle the tonkotsu base first into each warmed bowl — two parts tonkotsu to one part chicken-dashi. Add the chicken-dashi layer on top. At this stage the two soups are briefly visible as distinct layers before being combined. Add the shoyu tare per bowl. Stir to integrate. Add the compound aroma oil. Place the cooked noodles, then arrange chashu, ajitsuke tamago, nori, menma, and spring onion. Serve immediately — the aromatic oil must be detectable on approach to the bowl.
