    Fry the bread rounds in clarified butter over a medium-high heat until each side is deep golden. Set aside on a rack; the croûtons must remain crisp to provide the structural base that elevates the assembly and absorbs the meat juices without collapsing. They are ready when the surfaces are uniformly mahogany-coloured and rigid to the touch.

    Bring the pan to smoking heat — a drop of butter should brown in under five seconds. Add clarified butter and sear the tied tournedos for 2 minutes per side without moving them. The dish lives or dies here: a pan that is merely hot produces a grey, steamed interior and no Maillard crust; only a pan at full smoking heat delivers the mahogany exterior and rare-to-medium-rare centre (50–54 °C) the dish demands. Rest the tournedos on a warm plate, string still on.

    In the same unwashed pan, sear the flour-dusted, crosshatch-scored foie gras escalopes for 30 seconds per side over high heat. At 30 seconds the escalope is deeply coloured outside and barely warm in the centre; at 60 seconds it melts to a pool of fat and the dish is lost. Remove immediately and hold warm.

    Deglaze the pan with 60 ml Madeira, scraping all fond from the base. Reduce by half over high heat, then add 200 ml veal demi-glace. Reduce to nappant consistency — the sauce should coat the back of a spoon in a thin, even film and not be thickened with starch. Taste; a few drops of aged balsamic vinegar may be added to balance the richness.

    Remove the string from each tournedos. Place one croûton on each warm plate, set the tournedos on the croûton, lay the foie gras escalope on the tournedos, and centre the truffle slice on the foie gras. Each layer must be visible and aligned — the tower is architectural. Flash under a very hot salamander for 10 seconds: the foie gras edges will melt slightly, producing a glossy, unified surface. Nap with the Madeira sauce and serve at once.
