Method

  1. 1
Slice the gare-tteok diagonally at 45° to produce the traditional oval shape, then place the slices in cold water and soak for 30 minutes, so the slices absorb moisture evenly and will cook through to the centre rather than softening only at the surface while remaining hard within. The slices are ready when they have lost their surface dryness and yielded slightly to the touch.
  2. 2
Bring the clear beef stock to a gentle simmer in a wide pot and skim any fat or foam that rises, working patiently and repeatedly so the broth stays bright and amber rather than clouding with grey scum. Season with soy sauce and salt; the broth is correctly seasoned when it is light, clean, and distinctly savoury without heaviness — a vigorous boil or uncleared stock will cloud the surface and compromise the dish's defining clarity.
  3. 3
Drain the soaked rice cake slices and add them to the simmering broth, maintaining a gentle simmer throughout so the slices cook at a pace that lets them swell evenly without shedding starch into the broth and turning it milky. Cook for 8–10 minutes; the slices are done when they have swollen visibly, turned from opaque-white to a slightly translucent ivory, and yield to gentle pressure without resistance — do not extend cooking beyond this point, as over-cooked slices lose their defined edges and cloud the broth.
  4. 4
While the rice cakes cook, prepare the jidan: cook the egg whites and yolks separately in a lightly oiled pan over low heat, each as a thin flat sheet, keeping the heat low so the eggs set gently into smooth, unbrowned sheets rather than puckering or taking on colour that would mar the clean palette of the finished bowl. When set and just dry to the surface — no wet sheen — remove and cool, then cut each sheet into fine julienne strips.
  5. 5
Divide the soup and rice cake slices among four bowls, then arrange over each portion the sliced brisket, a tangle of white and yellow jidan strips, and cut nori, placing the garnish rather than stirring it in so the distinct colours remain in clean separation and the broth stays clear to the eye. The finished bowl presents a clear amber broth, ivory rice cake, and the composed colours of the garnish exactly as they were laid.
