    Brew the çay in a double-stacked çaydanlık: bring water to a boil in the lower pot, add tea to the upper pot, pour a small quantity of boiling water over the leaves, and allow to steep 10–15 minutes over low heat. The tea must be deep amber and fully extracted before service begins. Set tulip glasses on the table and begin refilling throughout the meal — the pace of the breakfast is governed by the rhythm of tea.

    Arrange the cheese and dairy components on individual small dishes: beyaz peynir sliced or broken (not crumbled), kaşar thinly sliced, kaymak presented in its own shallow dish alongside the comb honey. Bring butter to room temperature. These dishes go to the table first, as they anchor the savoury opening of the meal.

    Plate the olives — black and green separately — and the cured meats. Arrange the jams in small bowls. All cold components are now complete and must go to the table before any hot preparation begins.

    Cut the tomatoes and cucumbers to order, immediately before carrying to the table. Pre-cut vegetables lose vitality within minutes; this step cannot be done ahead. The surfaces must be bright, firm, and glistening — any sign of weeping or softening at the cut edge means the vegetable was sliced too early.

    Prepare the eggs last, directly before serving. Whether boiled, fried, or menemen, eggs deteriorate within minutes of cooking. This is the step on which the breakfast lives or dies: a cold fried egg or a rubbery boiled egg signals a failed table; the yolk of a fried egg must still tremble at the centre, a soft-boiled egg must yield silk at the cut, menemen must be just set and steaming. Carry immediately to the table.

    Bring the simit or bread to the table warm or at room temperature — toasted bread deteriorates quickly and should not be prepared in advance. The table is now complete: a minimum of eight distinct small dishes must be present before the meal begins. Fewer than eight reads as incomplete; the diversity of the spread is structural to the form.

    The meal progresses from savoury to sweet. Begin with cheese, olives, and eggs; move toward honey with kaymak and then jam as the meal advances. The sweet components are not touched at the outset — they diminish appetite for the savoury plateau. After 1–2 hours, when the savoury dishes are cleared, prepare Turkish coffee in a cezve and serve in small cups alongside lokum or dark chocolate. The coffee signals the formal close of the breakfast.
