    Heat a cast-iron tawa or heavy flat pan over a medium-high flame until a drop of water skitters and evaporates immediately, so the batter seizes on contact rather than spreading thin and sticking. Reduce the flame to medium, then wipe the surface with a cloth lightly dampened with oil to clean any residue and lay down a whisper of fat that prevents tearing when you lift the uttapam.

    Pour approximately 200 ml of fermented dosa batter onto the centre of the tawa and, using the back of a ladle, spread it in a single slow circular motion to a disc of even 1 cm depth — no thinner — so the dense interior has enough mass to cook through gently without drying out before the base colours. Do not continue spreading once the disc is formed; further strokes tear the surface and the batter will run at the edges rather than holding its shape.

    Immediately — before the surface begins to set — scatter thin-sliced onion, green chilli rounds, diced tomato and chopped coriander evenly across the wet batter surface, so the toppings sink into it as it firms around them rather than sitting loose on top. Press each topping gently into the batter with the back of the ladle so all elements are embedded flush, not resting proud. This is where the uttapam lives or dies: once the surface loses its wet sheen, toppings will not adhere and will slide free on flipping.

    Drizzle a little oil or ghee around the perimeter of the uttapam so the edges crisp and release cleanly from the tawa without needing to be forced. Cover with a close-fitting lid and cook for 3–4 minutes; the trapped steam drives heat into the dense centre from above while the underside crisps audibly, and the top surface will turn from glossy-wet to matte and set when it is ready.

    Remove the lid and check that the surface appears fully matte and the edges are visibly browned and pulling fractionally from the tawa, which tells you the structure is set and the uttapam will hold together through the flip. Slide a wide spatula beneath it and flip in a single confident movement, then cook the topping side for 1–2 minutes until the onion is lightly caramelised and the surface shows colour. The uttapam is done when it yields slight resistance — not softness — to gentle pressure at the centre.

    Slide onto a plate, topping side up. Wipe and re-oil the tawa between each portion so the surface is clean and evenly greased for the next one. Serve immediately with coconut chutney and sambar alongside.
