    This is where the dish lives or dies. Stream the oil in slowly — drop by drop at first, then in a thin, steady thread — whisking continuously in the figure-eight throughout. The fine droplet dispersion achieved here determines whether the dressing coats leaves evenly or breaks on contact. The finished vinaigrette should appear briefly homogenous, lightly opaque, and viscous enough to coat the back of a spoon without pooling.
