    Bring the water to a full rolling boil. Add the soba in loose handfuls and cook according to packet instruction — typically 3–4 minutes. The noodles are done when a single strand, bitten through, shows no white core and the texture yields with the faintest resistance. Drain immediately into a colander, then rinse under cold running water, rubbing the noodles briefly to remove surface starch, until the water runs clear and the soba is cold and firm to the touch.

    Combine the dashi, soy sauce, and mirin in a saucepan. Bring to a bare simmer over medium heat and cook for 2 minutes to marry the elements, then remove from heat. The broth should smell clean and savoury — roasted fish over a base of sea, with a line of sweetness at the back. Taste: it should be assertive enough to season a small mouthful of plain soba without any further addition. Keep warm throughout service.

    Arrange all condiments — natto, tuna, grated daikon, spring onion, nori — in separate small dishes at the centre of the table. Each diner should be able to reach every condiment from their seat. The condiment variety is not decoration: it is the mechanism by which each successive bowl becomes distinct from the last. Verify that the natto has been stirred sufficiently to develop its characteristic strings.

    This is where the dish lives or dies. Divide a single cook's portion of cold soba into units of approximately one-tenth of a normal serving — a small loosened nest, roughly one generous chopstick-pinch. Place one such unit into each lacquered bowl and ladle a small measure of warm tsuyu over it. The server stands beside the diner and, the instant a bowl is emptied, drops a fresh unit of soba into it without pause. The pace must be quick enough to feel continuous but never aggressive — this is a hospitality gesture, not a test of endurance. The signal that service ends is the diner placing the lid onto the bowl; refilling stops immediately and without comment.

    As service proceeds, invite each diner to select a condiment for each bowl — or none. The soba is the constant baseline; the condiment changes the character of each mouthful. The cumulative passage from plain soba, to fermented natto, to clean grated daikon, to savoury tuna, and back again is the intended flavour arc. The experience is complete when the diner covers the bowl and the count of empty bowls is declared.
