    Bring a large pot of water to a full rolling boil. Cook the fresh alkaline noodles until approximately 70 per cent done — they should be set but retain a firm, slightly raw centre — because the noodles will finish cooking in a second boil later, and carrying that residual rawness now is what gives the finished bowl its characteristic bite rather than a soft, overworked texture. The noodles will be pale yellow and offer clear resistance when bitten; drain immediately.

    Transfer the drained noodles at once to a wide tray or bowl and pour the sesame oil over, tossing thoroughly and continuously until every strand is separately coated and glistening, so the oil seals each noodle and prevents the strands from fusing together as they cool — a clumped noodle at this point cannot be rescued by the dressing. Spread across the tray and allow to cool; the strands must lie apart from one another. This is where the dish lives or dies.

    Thin the Chinese sesame paste with the light soy sauce, stirring until smooth and pourable, so the paste loosens into a dressing that will flow over hot noodles in seconds rather than clinging in heavy lumps. Add the garlic water and stir again; the dressing should coat a spoon lightly — not thick, not watery.

    Return the pot of water to a vigorous boil and lower the pre-cooked noodles into it for exactly 30 seconds — no longer — so they heat through to the core and shed any surface starch that would otherwise dilute and cloud the dressing. Drain immediately and thoroughly, shaking the colander to expel residual water, since any water carried into the bowl will break the sesame dressing and puddle at the base.

    Divide the hot noodles among four bowls and spoon the sesame paste dressing over each portion — dress lightly, as over-saucing is a known fault of the dish. Add the chilli oil, preserved daikon, and spring onion, then serve without delay: the bowl deteriorates within minutes, the noodles continuing to absorb the dressing and the heat escaping fast. The finished bowl should show lightly dressed, separate strands with visible toppings and no pool of sauce at the base.
