    Light the charcoal well in advance and fan it to intense, even heat, so that by the time the meat goes on you have pure radiant energy rather than volatile flame that would scorch the outside and leave the centre raw. The coals must be glowing white-grey with no residual black and no flame whatsoever. This preparation cannot be hurried.

    Thread each flat metal skewer with lean meat and tail fat in a strict 3:1 ratio — three cubes of lean to one cube of fat, alternating along the skewer so that the fat sits between sections of lean, because as the fat renders it continuously bastes the lean from within rather than running off a single end and dropping into the coals. Do not group the fat at one end. A skewer of pure lean cannot be saved by any technique.

    Combine the whole cumin seeds, ground cumin, chilli flakes, and salt, then press a portion of this mixture firmly onto all surfaces of each loaded skewer before grilling, so that the spices begin to bloom in the fat's heat the instant the skewer touches the coals rather than sitting raw on cooked meat. The cumin is structural to the dish's identity, not a garnish.

    Lay the skewers over the charcoal — the instant the meat contacts the grill, a loud, sustained sizzle must be audible, telling you the surface heat is high enough to colour the exterior before the interior overcooks. Silence at this moment means the coals are not ready; remove the skewers and wait.

    Turn the skewers every 60 seconds for a total cooking time of 4–5 minutes, so that each face builds colour in short, controlled passes rather than burning on one side while the other steams. This is where the dish lives or dies: in the final minute, press additional whole cumin, ground cumin, and chilli flakes into the cooking surface using the flat of a knife, so the second charge of spice scorches briefly and opens fully — this three-stage seasoning, before grilling, during cooking, and at completion, is the defining technique of the chuanr master. The exterior must be deeply coloured with some charring at the edges while the interior remains pink to medium; well-done chuanr is not chuanr.

    Remove from the heat immediately, because residual heat in the metal skewer continues to cook the meat and will push a pink centre to grey within a minute of resting. The fat pieces must appear translucent and fully rendered; a grey, spent cube of fat signals either an old animal or a fire that ran too hot. The dominant aroma should be cumin and rendered fat — any sharp or gamey note from the fat is a sign of failure at source.

    Serve at once alongside raw onion dressed in rice vinegar and thinned yoghurt sauce, so the sharp acidity of the onion cuts the richness of the rendered tail fat and keeps each bite clean. The first bite should yield a light caramelised crust that gives way immediately to a juicy interior. Chuanr held warm loses the textural contrast that defines it.
