Method

  1. 1
Peel the pomelo and divide into segments. Strip the thick outer membrane from each segment entirely — that membrane is dense, chewy, and intensely bitter, and even a small remnant will overpower the fruit's more delicate bitter-sweet balance. Working over a bowl, pull each segment apart by hand — or coax it gently with a fork — separating it into its individual juice vesicles. The goal is loose, discrete vesicles with no clumped or compressed pieces. Each vesicle, tasted alone, should hold a full charge of the pomelo's bitter-sweet juice and burst cleanly on the tongue.
  2. 2
Fry the sliced shallots in neutral oil over a moderate heat, stirring steadily, until deep gold throughout — moderate heat is essential here, as high heat browns the exterior while leaving the interior raw and sharp, producing bitterness rather than sweetness. Lift out with a slotted spoon and drain flat on paper. In the same oil, fry the sliced garlic until deep gold. Drain separately on paper — shallots and garlic are kept apart at this stage because their different thicknesses mean one would be over-fried before the other is ready, and commingling them makes it impossible to judge each correctly. Both must be fully dry and audibly crisp; any residual oil will cause them to soften rapidly.
  3. 3
Combine the lime juice, fish sauce, and palm sugar, and stir until the sugar is fully dissolved — undissolved palm sugar will sink and pool, delivering uneven bursts of sweetness rather than the seamless equilibrium the dressing requires. Taste: the dressing should carry equal weight of sour, salt, and sweet, with no single note dominant.
  4. 4
Place the separated pomelo vesicles in a large bowl. Add the coconut cream and turn gently so each vesicle is lightly coated without being crushed — the coconut cream forms a thin, unctuous film around each vesicle that tempers the acidity of the dressing and prevents it from penetrating too sharply into the fruit. Pour the dressing over and fold once more. Add the dried shrimp, roasted coconut, roasted peanuts, and fresh chilli, and fold briefly. Every element must remain distinct and separate — nothing should soften or merge into the others. This is where the dish lives or dies: compress the vesicles or overdress the salad and the defining textural integrity is lost.
  5. 5
Transfer to a serving plate. Scatter the fried shallots and fried garlic over the surface at the very last moment before service — they begin to lose their crispness within ten minutes of contact with the dressed salad. The finished plate should show visibly separate vesicles, flecks of gold shallot and garlic, and no pooling of liquid.
