Method

  1. 1
Salt the quartered cabbage in the standard baechu-kimchi manner, so the salt draws moisture evenly through every layer rather than puckering only the outermost leaves. Rinse thoroughly and drain. Press each quarter firmly between the palms — the leaves must feel supple and yield without resistance, releasing no further liquid.
  2. 2
Julienne the radish, Asian pear, jujube, and dried persimmon to a uniform size, and slice the chestnuts to a uniform thickness, so that no single element dominates a mouthful and the filling holds together as one thing rather than a collection of separate ingredients. Every cut piece across all components must match in dimension — the visual composition is inseparable from the dish's purpose.
  3. 3
Combine gochugaru, garlic, ginger, and fish sauce into the yangnyeom paste. Taste before adding seafood or fruit: the paste must read distinctly salty and spiced at this stage, because the pear, chestnut, and jujube will contribute natural sugars that soften it once folded in, and a paste that already tastes balanced will turn flat in the finished kimchi.
  4. 4
This is where the dish lives or dies. Add the seafood to the paste first and fold once to coat, so the delicate shellfish is surrounded by seasoning before the weight of the remaining ingredients goes in, then add the radish, pear, chestnut, jujube, persimmon, and garlic chives. Fold — do not toss — with the hands, turning the mixture over itself deliberately, so the pine nuts and jujube strips remain visually intact; any tearing or bruising of the delicate additions means the mixing has been too aggressive.
  5. 5
Lay each drained cabbage quarter open and distribute the filling between the layers, placing it with intention so that each colour — red gochugaru, white radish, orange pear, yellow chestnut, green chive — is visible at the cut face, because this kimchi is meant to be read with the eye before it is tasted. Fold the outer leaf over to secure. The assembled kimchi should present the full colour range apparent without unwrapping.
  6. 6
Pack into a container and allow fermentation to begin at room temperature for no more than a few hours before refrigerating, so the lactic activity starts gently without the seafood spoiling ahead of the vegetables. If the batch contains shellfish, it must be consumed within one to two weeks. Smell the container on opening each day: the fragrance must be clean, fermented, and fruit-forward — any off note from the seafood, sour beyond the expected lactic note or ammoniac, means the kimchi has passed its window.
