    Colour the sliced onion in half the butter over medium heat until deep golden. Add the turmeric and stir for one minute. Lay the chicken pieces in the pan, season with salt, and pour over half the bloomed saffron water. Add enough water to come halfway up the chicken, cover, and braise over low heat until the meat yields completely from the bone and the braising liquid has reduced to a thick, glossy sauce. Remove the chicken; reduce the liquid further if needed until it coats a spoon.

    Bring a large pot of heavily salted water to a full boil. Add the soaked, drained basmati and par-cook until each grain is tender at the edges but retains a firm, chalky centre — bite a grain to verify. Drain immediately and rinse once with warm water.

    Return the empty pot to medium heat. Add the oil and a thin layer of drained rice to form the tahdig base. Mound the remaining rice in a pyramid over it. Wrap the lid in a clean cloth, set it firmly on the pot, and steam over low heat. The dish lives or dies here: the rice must steam in its own trapped moisture long enough for each grain to elongate fully and separate — press a grain between two fingers; it should be entirely tender with no hard core — while the tahdig below develops into a crisp, golden crust that releases cleanly from the pot.

    Take two or three large spoonfuls of the cooked rice and mix with the remaining saffron water until the grains are deeply and evenly golden. Set aside as the showcase portion.

    Melt the remaining butter in a small pan over medium-low heat. Add the drained barberries and the pinch of sugar. Sauté, stirring gently, until the berries are heated through, glossy, and fragrant — they must remain visually intact with a slight texture; remove from heat the moment they begin to look plump and shining. Reserve 2 tablespoons of the sautéed barberries for the showcase topping.

    Mound the white steamed rice on a large serving platter. Fold most of the barberries loosely through the rice. Lay the saffron-gold rice over the top, then scatter the reserved barberries across the crown. Arrange the braised chicken pieces around or alongside the mound. Serve the reduced braising sauce in a small bowl at the table.
