    Place the live snails in a covered container lined with a damp cloth and hold for 72 hours, changing the cloth daily, so the snails fully expel their digestive contents and what remains in the gut does not turn the broth bitter. At the end of the purge, any snail that has not retracted into its shell and shows no movement when touched should be discarded.

    Bring a large pot of generously salted water to a rolling boil, add the purged snails, and blanch for 5 minutes. Drain and discard this water entirely, because it carries the first layer of slime and any residual impurities that would muddy both the colour and the smell of the finished broth. The snails will have contracted into their shells and the water will be grey and faintly cloudy.

    Warm the olive oil in a wide, deep pot over a medium flame, add the garlic, and cook until fragrant and pale gold. Add the white wine and allow it to reduce by half, so the raw alcohol cooks off and what remains is the wine's fruit rather than its sharpness. Add the tomatoes and the wild fennel frond, stir, and cook the base for 10 minutes until the tomatoes have collapsed into a loose sauce that smells sweet and sharp.

    This is where the dish lives or dies: add the blanched snails to the tomato base, pour in enough water to just cover, and season the broth aggressively with salt, because the snail meat itself absorbs very little and the broth must carry the full weight of the flavour. Cook at a steady, moderate simmer for 45–60 minutes. The dish is ready only when the snail meat comes free of the shell easily when probed with a toothpick or pin; meat that resists is tough and rubbery and requires more time.

    In the final 2 minutes of cooking, remove and discard the fennel frond, then scatter the parsley over the broth and cook no longer than 2 minutes from this point, so the parsley keeps its bright colour and clean, grassy fragrance rather than yellowing and turning flat. The broth should be deep red, glossy, and intensely mineral in aroma.

    Place a thick slice of grilled bread in the base of each warmed bowl and ladle the snails and broth generously over the bread. Serve immediately, with additional bread alongside for mopping the broth.
