    Place the Lard d'Arnad slices in a cold, heavy pot. Set over a low flame and render slowly, turning once, until the fat runs clear and the solids are pale gold. Add the sliced onion and continue over low heat until the onion is fully softened and translucent — it must not colour.

    Add the outer savoy cabbage leaves, torn into large pieces, to the rendered lard and onion. Turn to coat in the fat. This is where the dish lives or dies: the cabbage must braise gently in the flavoured lard fat until it collapses fully and becomes deeply fragrant — not merely wilted. The coarse outer leaves will take time; they should be tender throughout and carry the pork-herb richness of the lard into every strand.

    Pour the hot beef broth over the braised cabbage. Bring to a steady simmer and cook, uncovered, until the broth is rich, cohesive, and the cabbage has given up all structure — the liquid should be golden and fragrant with both the broth and the rendered lard.

    Place two slices of stale rye bread in the base of each warmed soup bowl. Lay slices of Fontina DOP over the bread to cover. Add a pinch of ground white pepper and a scrape of freshly grated nutmeg over the Fontina.

    Ladle the very hot soup directly over the bread and Fontina in each bowl. The Fontina must melt on contact with the arriving soup, forming threads through the broth — not pre-cooked, not stirred, simply dissolved by the heat of service. The bread will absorb and swell. Serve immediately.
