Dundee Hills Pinot Noir

Dundee Hills, USA
Domaine Drouhin Oregon's estate pinot noir from the Dundee Hills, the wine that announced Burgundy's direct investment in Oregon as a serious fine wine venture. Robert Drouhin purchased 89 acres on Red Hills Drive in 1987 after Eyrie's 1975 pinot noir outperformed his own Chambolle-Musigny in a blind tasting organised by Gault-Millau in 1979. His daughter Véronique has been winemaker since 1988. The wine is more Burgundian in style than most Oregon pinots: restraint, precision, and structure over forward fruit; it ages magnificently.

Pinot Noir with duck is a foundational classic pairing: the wine's red cherry and earthy character complement the rich, gamey meat. Mushrooms bridge the earthy forest-floor notes in the wine. The duck jus echoes the savouriness of the wine. Weight match is near-perfect — Pinot Noir's medium body matches duck without being overwhelmed.

Chanterelle's apricot-earth character mirrors the terroir notes in Dundee Hills Pinot Noir. The mushroom's butter richness meets the wine's silky body; thyme's aromatics bridge the wine's herbal development notes.

Dundee Hills Pinot's characteristic red cherry and spice melt into the richness of triple-crème brie; honeycomb bridges the wine's fruit while thyme echoes its herbal note.

seafood
Pacific salmon is the only fish that regularly works with light red wine. The cedar plank adds a smoky, aromatic element that bridges with the earth in Pinot Noir. The wine's low tannin avoids the metallic reaction that heavier reds produce with fish oils. Dill crème fraîche provides acid that matches the wine's acidity. A PNW regional pairing of the highest conviction.

Dundee Hills Pinot's silky texture and red cherry brightness creates a compelling bridge with gravlax; the dill and lemon in the crème fraîche echo the wine's herbal note while cucumber provides refreshing contrast.
