About this product
Eyrie Vineyards' flagship expression from the oldest pinot noir vines in the Willamette Valley, planted by David Lett in 1965–1966 when he became the first to bring Burgundian varieties to Oregon. David Lett (known as "Papa Pinot") staked everything on the conviction that Oregon's cool climate could replicate Burgundy; his 1975 Pinot Noir's performance in the 1979 Gault-Millau tasting against premier cru Burgundies validated that bet and established Oregon on the international map. Now produced by David's son Jason Lett, who preserves the original philosophy: no new oak, minimal intervention, absolute respect for the vineyard.

The Original Vines' aged character and earthy undertones amplify the rosemary and herbs of the salsa verde; lamb provides the fat and iron register that demands the wine's structural depth.

poultry
Quail is Pinot Noir's second-most classical companion after duck. The bird's gamey, delicate meat matches the wine's restrained red fruit and earthy minerality. Pine nut-herb stuffing adds fat and fragrance that bridges with the Pinot's forest-floor secondary. Roasted beet's earthy-sweet character echoes the wine's mineral depth. Eyrie's restraint makes this pairing about harmony, not dominance.

contrast
cheese
The contrast works through the Pinot's acid against the fat and salt of Gorgonzola, while the wine's red fruit character bridges the beetroot's earthy sweetness. An unconventional cheese course choice that demonstrates Pinot's versatility.
