Granville Island Brewing's Artisan Sake Maker (also known as Osake) — Canada's only sake brewery on Granville Island in Vancouver, founded by Masa Shiroki. Osake uses Japanese kome koji fermentation with BC-grown rice varieties adapted to the cool Pacific climate, producing a sake of unusual clarity and delicacy. The Junmai Ginjo is the flagship: fragrant, light, with melon and floral notes characteristic of ginjo-grade brewing. Masa Shiroki's operation is a genuine cultural project — bringing traditional Japanese sake craft to BC and producing the only locally-made sake in the province.
