Hypothesis

Okanagan Valley, Canada
Culmina Family Estate Winery's flagship Bordeaux blend from their estate on the southern Okanagan benchland, developed by the Triggs family (co-founders of Vincor International) after selling their wine distribution empire. The name reflects Donald Triggs's thesis that the south Okanagan can produce Bordeaux blends at the international level. A disciplined, precise wine with more structural restraint than many south Okanagan reds — the viticulture and winemaking philosophy here consciously corrects for over-ripeness in pursuit of genuine Bordeaux analogy.

Bisque's cream richness needs a white wine with body but not oak weight. Pinot Blanc's stone fruit and clean mineral finish cuts through cream without competing with the delicate crab. Tarragon's anise character bridges the wine's light herbal note.

Clothbound Cheddar's nutty, crystalline texture and sharp lactic bite is one of the best matches for structured red blends. Quince paste bridges sweet-savoury across the pairing; walnut's fat and bitterness echoes the wine's tannin. The Naramata Bench lake-moderated acid in the wine prevents the tannin from dominating the cheese.

Artichoke's cynarin compound makes most wines taste sweeter after. Pinot Blanc's clean, non-assertive profile holds shape against artichoke; lemon aioli bridges the wine's citrus acid.

Hypothesis's bright acidity and fresh, apple-mineral character are a natural partner for Pacific halibut ceviche — the lime and chipotle's heat is moderated by the wine's clean fruit while the avocado's richness is refreshed by its acidity.

Rabbit's delicate white meat and the mustard-tarragon cream sauce need a white wine with enough structure to match the sauce's richness without overwhelming the meat. Pinot Blanc's bright acid cuts through the cream; the stone fruit character bridges the tarragon's anise note.
