Casteel Reserve Pinot Noir

Eola-Amity Hills, USA
Bethel Heights Vineyard's flagship pinot noir from the founding Casteel family estate, one of the oldest continuously operated family wineries in the Eola-Amity Hills. Founded 1977 by the Casteel siblings; the estate vineyard on the east-facing slope above the valley floor has been a consistent source of pinot noirs that demonstrate the Van Duzer wind effect: cool, structured, and made for ageing rather than immediate gratification. The Reserve is assembled from the best blocks each vintage.

The sauce is the same wine. Crème fraîche bridges the wine's acid character. Self-referential pairing of the Pacific Northwest.

Casteel Reserve's dark-fruit depth and silky tannin are calibrated for the long-braised richness of confit; smoked lardon amplifies the wine's faint smokiness while lentils ground the mid-palate.

Casteel Reserve's mushroom-inflected earthiness and silky structure are a seamless bridge to the risotto's porcini depth and Parmesan umami; truffle oil adds a luxury layer that the wine's concentration can support.

game
Duck liver's rich, metallic, gamey character requires a wine with mineral depth and acid to manage both the richness and the iron notes. Casteel Reserve's mineral and earthy character bridges with the liver's depth; the wine's structured red cherry provides fruit contrast. Caramelised apple's sweetness mirrors the wine's fruit register and provides a softening counterpoint to the liver's intensity.

The Casteel Reserve's silky texture and concentrated red fruit echo duck's richness while the cured element's salt amplifies the wine's natural savouriness — an aperitif-style pairing of great refinement.
