Dubh Glas Distillery's flagship whisky from their Oliver, BC operation in the south Okanagan — among BC's most geographically appropriate single malt operations, given the Okanagan's continental climate echoing the extremes of Scotland's Highlands. Founded by Grant Stevely, Dubh Glas (Scots Gaelic for "black water") uses BC-grown barley and local spring water, maturing the whisky in ex-bourbon and virgin Canadian oak under the Okanagan's dramatic temperature swings — cold winters and very hot summers accelerate maturation relative to Scottish conditions.
