Mirror Pond Pale Ale

Willamette Valley, USA
Deschutes Brewery's flagship American pale ale from Bend, Oregon, one of the founding craft beers of the Pacific Northwest and still among the most widely distributed Pacific Northwest craft beers in Canada and the US. Founded 1988 by Gary Fish in a downtown Bend pub, Deschutes became Oregon's largest craft brewery through precise execution of accessible, well-balanced styles. Mirror Pond — named for the Deschutes River feature outside the original pub — is a textbook Pacific Northwest pale ale: clean, moderately hopped, with a balance that made it the gateway craft beer for a generation of PNW drinkers.

appetizer
Pale ale with pretzel and cheese dip is the simplest, most honest beer pairing. The beer's light hop florals complement the pretzel's bready Maillard crust; the IPA cheddar dip's sharpness is matched by the ale's mild bitterness. Whole-grain mustard's tangy heat is managed by the beer's carbonation. An aperitif pairing of maximum ease and minimum pretension.

Mirror Pond's balanced hop character, moderate bitterness, and clean malt base are the textbook complement to a quality cheeseburger — the carbonation resets cheese fat while bitterness balances the richness.

seafood
Mirror Pond's balanced hop character and clean malt base are a natural counterpoint to ahi tuna's lean richness; wasabi's heat and ponzu's acidity are both managed by the pale ale's refreshing carbonation.

meat
Mirror Pond's balanced hop character and clean malt base handle the lamb's richness with grace; feta's salt amplifies the pale ale's bitterness while tzatziki's herb-cool cools the palate between bites.

Double IPA bitterness and tropical hop character contrast against the chilli heat; carbonation resets between bites. Intensity-matching pairing.
