Cambodian cooking — the culinary tradition of the Khmer people and the Khmer Empire (802–1431 CE, which at its peak controlled much of mainland Southeast Asia) — is simultaneously one of the oldest continuous culinary traditions in Southeast Asia and one of the most severely disrupted. The Khmer Rouge period (1975–1979) destroyed not only people but food traditions — the systematic murder of the educated class included the people who had documented and maintained the country's culinary traditions. The recovery of Cambodian food culture is ongoing.
