Sticky rice (khao niaw — glutinous rice) is the staple grain of Northern and Northeastern Thailand (Isaan), and its preparation and consumption are fundamentally different from jasmine rice. The sticky rice tradition of Northern Thailand reflects the cultural connection with Laos — the two regions share the same rice variety, the same preparation technique, and the same eating tradition (eating with the hands, using sticky rice as both utensil and food).
