Laotian cooking — the culinary tradition of one of the world's most landlocked and least developed countries, bordered by China, Vietnam, Cambodia, Thailand, and Myanmar — is the least documented of the major Southeast Asian culinary traditions in English. It is simultaneously the closest relative of Thai cooking (the Lao and Thai languages are mutually intelligible; the Lao diaspora in northeastern Thailand is so large that Isaan cooking is essentially Lao cooking) and distinctly itself.
