Mouneh (مونة — provisions, provisions stored against need) is the Lebanese mountain tradition of preserving the summer's abundance for winter — a complete preservation system that encompasses pickles (mekhallel), jams and preserves (murabbayat), dried herbs, clarified butter (samneh), sun-dried tomatoes (banadoura mjaljaleh), fermented grains (kishk), and preserved meats (awarma).
