Zereshk (barberries — Berberis vulgaris) is the defining souring agent of Persian rice preparations — the tiny, intensely tart red berries that appear in zereshk polo (barberry rice) and as a garnish across the Persian table. Their specific tartaric and malic acid combination, their vivid red colour, and their seed-like texture make them irreplaceable in Persian cooking.
