Andaliman (Zanthoxylum acanthopodium) — a relative of Sichuan pepper (Zanthoxylum piperitum) — grows wild in the highlands of North Sumatra, specifically in Batak country around Lake Toba. Wongso calls it Indonesia's "unsung ingredient" — unknown outside of Batak cuisine, unavailable in most of Indonesia, and completely absent from the international market. Yet for the Batak people, andaliman is as essential as salt.
