Bubur Ketan Hitam: Black Rice Pudding

Bubur ketan hitam — black glutinous rice cooked in water until soft and porridge-like, sweetened with palm sugar, and served with thick coconut milk poured over. The black rice provides a DRAMATIC visual — deep purple-black — and a distinctive nutty, slightly earthy flavour that white glutinous rice does not have.
