Hobak-juk — Kabocha Pumpkin Porridge (호박죽)

Hobak-juk (호박죽) is made from Korean kabocha squash (단호박, danhoback — Cucurbita maxima), a dense, richly sweet variety that produces a naturally vivid orange porridge requiring almost no added sugar. The technique involves steaming or roasting the kabocha whole until completely tender, removing the skin, mashing the flesh, then simmering with soaked glutinous rice or glutinous rice flour balls (ong-shimi, 옹심이) until the starch thickens the base to a velvety, almost pudding-like consistency. The ong-shimi bob in the porridge like small soft dumplings, providing chew against the smooth base.

Hobak-juk is complete as a standalone — served as a light breakfast, dessert, or late-night meal. No banchan needed. Boricha (barley tea) alongside is the traditional accompaniment.

After steaming the kabocha, refrigerating overnight deepens the sweetness through enzymatic conversion of starches to sugars. Never strain the purée — the slight rustic texture of squash mash in a smooth base is part of the character. A garnish of roasted pine nuts adds fat and visual contrast to the monochrome orange bowl.
