Manisan: The Indonesian Preserved Fruit Tradition

Manisan (from *manis*, "sweet") — fruits preserved in sugar syrup, dried, or candied. The Indonesian equivalent of French fruits confits. The tradition uses tropical fruits that do not preserve well fresh: mango, papaya, nutmeg fruit (the fleshy outer fruit of the nutmeg seed — a Malukan specialty), pineapple, starfruit, and tamarind.
