Melinjo: The Cracker Nut

Melinjo (Gnetum gnemon) — a tall tree that produces small, olive-like fruits with edible seeds used to make emping (INDO-KRUPUK-01). The seeds are shelled, roasted, pounded flat into thin wafers, dried, and deep-fried. Emping has a distinctive BITTER flavour that distinguishes it from all other Indonesian crackers — a pleasant, dark bitterness like a very mild coffee.
