Paloma

The Paloma's exact origin is disputed. Don Javier Delgado Corona at La Capilla bar in Tequila, Jalisco, is the most frequently credited inventor. The drink likely emerged in the 1950s–1960s alongside the rise of tequila cocktail culture in Mexico. The combination of grapefruit and tequila predates any named version — Mexican bartenders and home drinkers combined these flavours naturally before the Paloma was formalised.

The Paloma is Mexico's most consumed cocktail — tequila and grapefruit soda (or fresh grapefruit juice and soda water) served in a salt-rimmed glass over ice, a drink that is both more nuanced and more refreshing than its reputation as 'the simpler Margarita' suggests. The name means 'dove' in Spanish, and the drink has the gentle, approachable quality the name implies. Where the Margarita is structured precision, the Paloma is effortless refreshment — the grapefruit's bitter-sweet profile harmonises with tequila's agave character more naturally than lime does, creating a drink that is forgiving, scalable, and regionally authentic. In Mexico, it is most commonly made with Squirt grapefruit soda; bartenders' versions use fresh grapefruit and are definitively superior.

FOOD PAIRING: The Paloma's grapefruit freshness and agave earthiness pairs with Mexican, grilled, and bitter preparations. Provenance 1000 pairings: fish tacos with pickled cabbage (the grapefruit acidity mirrors the cabbage's tartness), carne asada with salsa verde (the tequila-agave bridge is direct), grilled shrimp with chile butter (the bitter grapefruit cuts the chile heat), enchiladas verdes (tomatillo-grapefruit is a natural citrus pairing), and aguachile.

{"Blanco tequila is the Paloma's spirit: the agave's clean, fresh, slightly vegetal character harmonises with grapefruit. Cazadores Blanco, El Jimador Blanco, and Olmeca Altos are the working-class Mexican bar choices; Patrón Silver and Fortaleza Blanco are premium options. 100% agave only.","Fresh grapefruit juice is infinitely preferable to Squirt or other grapefruit sodas. Use ruby red grapefruit for sweetness and colour; white grapefruit for sharper, more bitter complexity. Fresh-squeezed, used within 1 hour.","Salt rim is functional: half-rim the glass in sea salt (or a tajin-salt blend for the Mexican street variant). Salt suppresses the grapefruit's bitterness and amplifies the agave's sweetness.","Standard ratio: 2 oz blanco tequila, 2 oz fresh grapefruit juice, 1/2 oz fresh lime juice, 1/4 oz agave syrup (adjust to grapefruit sweetness), 2 oz soda water. Build over ice, add soda last.","A Tajin rim (the chile-lime-salt seasoning powder popular in Mexico) replaces or accompanies salt for a spicy, tangy border that amplifies the grapefruit's bitterness in a different direction.","Garnish with a grapefruit wedge or wheel. The visual of a pink grapefruit slice against the salted rim is the Paloma's signature presentation."}

The Mezcal Paloma (substitute mezcal for tequila) adds a smoky dimension that amplifies the grapefruit's bitterness into something more complex and brooding — a favourite in mezcalerías. For a sophisticated Paloma at home: use a Campari float (pour 1/4 oz Campari over the back of a spoon onto the surface of the finished drink) — the Campari's bitterness deepens the grapefruit note and adds a Mediterranean complexity.

{"Using sweetened grapefruit soda (Squirt, Jarritos Toronja) in a bar context: these sodas are heavily sweetened and produce a flat, syrupy Paloma. Fresh grapefruit + soda water gives control over sweetness and tartness.","Skipping the lime juice: the lime's acidity bridges the tequila's agave and the grapefruit's bitter-sweet, providing a structural clarity that grapefruit alone lacks.","Using reposado or anejo tequila: the oak and vanilla of aged tequila fights with the grapefruit's freshness. Blanco lets the grapefruit and agave relationship be the focus.","Over-sweetening: the Paloma should be on the dry side. The grapefruit has natural sugar; additional syrup should be used sparingly."}
