Parmigiano Reggiano is the most important single ingredient in Italian cooking — present in some form in virtually every preparation from pasta to soup to risotto to salad. Hazan is uncompromising about its centrality and specific about the distinction between genuine Parmigiano Reggiano (DOP, made exclusively in a defined zone around Parma and Reggio Emilia from specific cattle) and any substitute. The difference is not subtle — Parmigiano's crystalline texture, its balance of lactic sweetness and savoury depth, and its specific solubility in fat make it irreplaceable.
**Reading quality:** - The rind should show "Parmigiano Reggiano" stencilled repeatedly around it — this is the DOP authentication - The interior should show the characteristic needle-like amino acid crystals (tyrosine crystals) — white specks throughout the paste. These crystals are the flavour: the breakdown of casein protein into free amino acids (glutamate concentration) during the 12–36 month ageing process - Colour: pale straw yellow throughout. Chalky white areas indicate under-aged or poorly made cheese. Very deep orange-yellow indicates over-ageing or poor milk quality - [VERIFY] Whether Hazan specifies ageing categories (18-month vs 24-month vs 36-month) **Grating:** - Always freshly grated — pre-grated Parmigiano has lost 30–40% of its volatile aromatic compounds through oxidation. The smell of freshly grated Parmigiano (lactic, fruity, slightly sweet) versus the flat smell of pre-grated is the evidence - The correct grater: the fine side of a box grater or a rotary grater — fine enough to produce a powder that melts smoothly, not coarse shards that don't dissolve **The rind:** Never discard the rind. Added to soups and braises (as in HAZ-12), it releases concentrated glutamates into the cooking liquid over the full cooking time. One of the highest-value single flavour additions in Italian cooking. **When not to use Parmigiano:** With seafood pasta (the dairy overwhelms marine flavour); with very delicate vegetable preparations where its assertive character would dominate.
