Pavlova is the meringue dessert that NZ and Australia both claim as their own (the origin is genuinely disputed). A crisp meringue shell with a marshmallow-soft interior, topped with whipped cream and fresh fruit (kiwifruit and passion fruit are the NZ standard). Pavlova is NZ Christmas dinnerʻs closing argument. The technique is in the baking: low and slow to produce the crisp-outside-soft-inside texture that distinguishes pavlova from a simple meringue.
