Portuguese Bean Soup — Hawaiian Comfort Bowl

Portuguese sausage is browned, then simmered with kidney beans, diced potatoes, onion, garlic, tomatoes, and cabbage in water or stock for two to four hours until the beans are tender and the broth is rich. Some versions add elbow macaroni. Served in deep bowls with Portuguese sweet bread for dipping.

1. EXCEPTIONAL: House-made Portuguese sausage, quality kidney beans (soaked overnight), slow-simmered for four hours. The broth is rich, the sausage is smoky, and the beans are creamy. 2. GOOD: Standard ingredients, proper simmering time. 3. ADEQUATE: Quick-cooked with canned beans. 4. INSUFFICIENT: Under-simmered — the broth is thin and the beans are firm. This soup needs time.
