Sambal Oelek: The Raw Chilli Base

Sambal oelek (ulek) — the most basic sambal. Red chillies and salt, pounded in the cobek. Nothing else. No garlic, no shallot, no terasi, no lime. JUST chillies and salt. The name comes from *ulekan* — the pestle — because the making IS the technique: pound until a rough paste forms.
