Tachin (ته چین)

Iran — tachin is a Persian party dish associated with celebrations; particularly popular at weddings and New Year tables; the name means 'arranged at the bottom'

Persian saffron rice cake — a spectacular preparation in which saffron-stained yogurt-and-egg-marinated chicken is layered within parboiled rice, pressed into a pot, and baked or cooked on the stovetop until a solid, sliceable golden cake forms that can be inverted onto a platter. Tachin occupies the overlap between tahdig (crispy rice) and a rice mould: the rice-yogurt-egg mixture creates a binding matrix that holds the rice cake together as a unit, and the saffron (bloomed in hot water) produces a deep golden colour throughout. The chicken inside the cake is flavoured with onion, saffron, and salt before incorporation; the outer layer of rice is the most intensely saffron-coloured. When inverted, the cake's golden exterior should be intact and sliceable.

For the most impressive presentation, line the pot with a disk of parchment paper before oiling and assembling — the parchment ensures clean, complete release when inverting, even if the crust has adhered slightly in spots. Layer barberries (zereshk) soaked in saffron water on top of the chicken layer before adding the final rice layer — they emerge at the top when inverted, creating a beautiful ruby-red mosaic on the golden crust.
