The Padang restaurant — *rumah makan Padang* or *nasi Padang* — is the most widely distributed restaurant concept in Indonesia and one of the most brilliantly efficient food-service systems ever devised. There are an estimated 100,000+ Padang restaurants across Indonesia (and growing numbers globally, from Amsterdam to Sydney to Los Angeles), all operating on the same model: every dish is pre-cooked, displayed at the front of the restaurant in a glass case, and served to the table simultaneously in small bowls. The diner eats what they want and pays only for what they touch. Untouched dishes are returned to the case. The system originates from the Minangkabau merantau tradition — the cultural practice of young Minangkabau men leaving their matrilineal homeland in West Sumatra to seek fortune elsewhere.
