The coconut is freshly grated (not desiccated), mixed with bumbu (chilli, shallot, garlic, kencur, lime juice, palm sugar), and either served RAW (urap mentah — the coconut dressing is fresh and aromatic) or STEAMED (urap matang — the coconut dressing is cooked, producing a drier, more concentrated flavour).
