Venencia technique: drawing sherry from the cask

The venencia is the instrument used to draw sherry from the cask in Jerez bodegas — a narrow cylindrical cup on a long flexible cane handle, designed to reach through the bunghole of a barrel without disturbing the flor yeast growing on the surface of fino and manzanilla. The venenciador draws the wine from beneath the flor and pours it from height into a copita glass without touching the instrument or breaking the pour. The technique is part of a continuous tradition of fino and manzanilla service that emphasises freshness above all. Fino drawn from the barrel and poured by venencia is a different experience from bottled fino — less oxidised, more alive, with the flor character at full expression.

The venencia must enter the barrel smoothly, below the flor layer without disturbing it. Draw only small volumes — 60-70ml maximum per pass — to maintain the ratio of flor to wine in the barrel. Pour from 30-40cm above the glass in a continuous stream that aerates without splashing. The copita — the small, tulip-shaped sherry glass — concentrates the aromas. Service from the venencia is a live act; the wine must be drunk immediately.

The venencia technique takes years to master in the bodegas of Jerez. For service purposes, the important lesson is temperature and freshness: fino and manzanilla must be stored cold and treated like a white wine, not a fortified wine. Once opened, a bottle of fino has a 1-week window at most in the refrigerator. An unfinished bottle more than a week old should be used in cooking.

Disturbing the flor layer — this contaminates the wine and can damage the barrel's yeast culture. Pouring too slowly — the venencia should produce a clean, confident arc. Using standard wine glasses — the copita is designed specifically for the aromas of aged fortified wines. Serving fino or manzanilla at room temperature — must be served cold (7-9°C).
