Xian bing (馅饼) — stuffed pancake/flatbread — is a Northern Chinese street food: a thin wheat dough is filled with spiced pork and vegetable mixture, folded and sealed, then pan-fried in a flat pan with oil until golden on both sides. Distinct from jiaozi (boiled) and sheng jian bao (steamed-then-fried): xian bing is entirely pan-fried and has a thicker dough.
