Shao bing (烧饼) — sesame flatbread — is the Northern Chinese street bread tradition, baked in a barrel oven (tandoor-like). The dough is rolled with oil paste to create flaky layers, folded, shaped, pressed in sesame seeds, and baked directly on the oven wall. Multiple regional varieties: Shandong round shao bing, Beijing sesame shao bing, Tianjin fried shao bing.
