Shandong Congee (Xiao Mi Zhou) — Millet Porridge Tradition
Northern China — Shandong, Hebei, Inner Mongolia traditions
Xiao mi zhou (小米粥) — millet congee — is the Northern Chinese answer to Cantonese rice congee: millet simmered until the grains break down into a creamy, golden porridge that is nutritionally dense and deeply warming. The Shandong version is eaten at breakfast and as recovery food after illness — considered cooling and nourishing in TCM. Usually served with savoury pickles and steamed buns.
