The most iconic Taiwanese comfort food: fatty pork belly braised with soy sauce, rice wine, five-spice, and shallots until the fat is trembling and the sauce has reduced to a dark, glossy, intensely flavoured liquid, served over plain steamed rice with a braised egg and pickled mustard green.
