Zhua fan (抓饭) — literally 'grab rice' — is the Uyghur lamb and vegetable rice pilaf, a Central Asian osh tradition. Lamb pieces are browned with onions and carrots, covered with rice and water, then slow-cooked in a covered cauldron. The rice absorbs all cooking liquid and fat, becoming deeply flavoured. Eaten by hand (hence 'grab') at communal celebrations.
